I've solved the problem thanks to the following Post, therefore I am leaving a trail for other to follow.
How to place an exception in the Windows Defender
1. In the search bar, type defender, and select 'Windows Defender Settings'
2. Make sure in the Device Manager > Disk drives
It is using Disk OEM Ext (NOT SCSI as detected automatically on My Computer).
How to update the driver:

1. If it is SCSI, then Right Click on the Disk OEM .. SCSI Select Properties.
2. Select Driver Tab in the Properties Windows.
3. Update Driver
4. Browse my computer for driver software
5. Let me pick from a list of device drivers on my computer
6. Untick Show compatible hardware
7. Find Manufacturer OEM and select OEM Disk Drive.
Iomega
Let the process finish install.
If you'll see a Yellow Exclamation Mark on the Disk OEM.
Right Click and Select Update Driver Software (This fixed my problem).

I always thought it is a problem with 'Iomega Encryption' Software, which is the cause of not finding the Answer :)
